The remarkable explosion in English winemaking over the last 20 or so years has been driven by sparkling wine. The reason for that is that despite a warming climate, England is still relatively cool for grape growing. That means grapes with high acidity, and they suit sparkling wine better, since the effect of bubbles in a wine is to mask acidity. But as the climate warms and viticulture improves, we are starting to see top class, ripe still wines. And we also have a diverse, home-grown spirits industry. After all, we invented gin as it is known today. Just look at the names of the primary gin categories: London, Plymouth, Bristol.
