The 2021 Brut Preamble No. 2 is a blend of 75% Pinot Noir and 25% Chardonnay, harvested in late October. The base wines ferment in both stainless steel and oak, undergoing full malolactic conversion. The wine spends three years on lees, offering melted butter and crunchy, tart red-green apple on the nose. The palate is slender, smooth and flowing, with a yeastiness that mellows and calms the apple tartness. The finish is balanced and smooth. Dosage is 5 grams per liter. 89 points
