Abelha (`the Bee`) is no factory operation. This is a small scale, artisanal Cachaca made in the town of Rio de Contas out in the hills of southern Brazil - it goes to market by tractor the roads are so bad. While rum is made from boiled sugarcane juice, the base product of cachaca is the fresh sugarcane juice which is fermented, then distilled. Abelha distil in the traditional Alambique, and use homegrown sugarcane yeasts for a superior product. Makes a wicked caiparinha. (NT 05/08/15)
