N.V. Bollinger Special Cuvee

60% Pinot Noir/25% Chardonnay/15% Pinot Meunier

Bollinger was founded in 1829, but raised to greatness by Madame Lily Bollinger in the aftermath of the Second World War. She expanded Bollinger`s holdings to the extent that it can now supply two-thirds of its own grapes, a rare advantage over its competitors. And she insisted on continuing to vinify in oak barrels. (`It is the traditional methods that count, even if they appear outdated: the quality of my wines is proof of this.`) Unusually, the reserve wines that go into the classic non-vintage Special Cuvee are stored in magnum, which allows them to develop whilst at the same time guarding against oxidation. One of the great Grand Marque non-vintage sparkling wines of Champagne. (NT 07/08/24)

Like its rose counterpart, the latest release of Bollinger`s NV Brut Special Cuvee is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy mousse, it`s a charming, characterful wine that proves that Special Cuvee is firmly back where it belongs. 92 points
