The Miles Mossop Wines 2022 Stellenbosch Chapters Cabernet Sauvignon comes from a site with decomposed granite soil rich in iron and reddish koffie klip. The wine is racked four times with no fining. It has a naturally good pH and high acidity. What stands out most is the texture of the wine and its pretty tannins that come at the back of blackberry fruit and plum. There is a nice point of sweetness on the mid-palate, and the wine proceeds with velvety richness. The tannins feel quite hydrated. No punch-downs are executed because Miles Mossop wants to avoid too much extraction. In fact, he uses a bucket to keep the cap wet. This vineyard site tends to build extraction quickly, and the trick is finding balanced extraction and tannins. It ages in barrel for 25 months with 15% new oak. 94 points
