It may only be 11.5% alcohol, but this wine has presence. Almost a precursor of a Manzanilla, this shows distinct hints of marmite aromas on thenose and many flor characteristics. It is sharply umami and if you are looking for a wine that is not Sherry to fulfil this role you won`t find better. A long finish with a zesty element, salty minerality and a sense of chalk and stone all contribute to the complexity here. It is a super-natural wine for all sorts of food and with its old school lowish alcohol and freshness a brilliant part of your drinking armoury. (CW 22/03/21)

‘Before the flor’ is an unfortified white wine made from old, low-yielding Palomino Fino vines in the Miraflores La Baja vineyard, where vines are either 50+ or 80+ years old. Not fermented in cask nor aged under a veil of flor. It has rested for a year in a full 10,000-litre stainless-steel tank, protected from the flor by filling the tank to the top and by keeping the wine on the lees – and the tank is not in the same part of the bodega as the casks, where flor is everywhere. Screwcap. TA 5.4 g/l, pH 3.09. Smells salty and just very slightly yeasty, even without the flor influence – or maybe these are a consortium of aromas I associate with Manzanilla when in fact they are the aromas of wine made from this vineyard? Dried wild flowers and hay, too. Pungent but with an aroma I find impossible to describe. There is a very strong mineral quality but I am not sure where mineral starts and salty ends. Salty in the mouth too, powerful flavour with intensity but almost no weight in the mouth thanks to the very low alcohol. Salty, sour, mineral, with citrus at the very end. The producers note: ‘fine, clean, sharp, vertical’. Extremely pure, mouth-watering, long. Not for fruit lovers, it’s lean but not in the least thin. Remarkable intensity. If you taste this alongside the 101 Manzanilla, there are so many similarities, this is just more delicate and not at all oxidative. 17 points
