You’ll find Ardmore Distillery south of Huntly, where the Grampians meet the fields. It is one of the survivors from the 19th century whisky boom, and one of the few distilleries in the area that always used peated barley. Volumes of peat aren’t huge – think Campbeltown rather than Islay – but it still puts the Ardmore in a completely different flavour park from your average sweeter Highland malt. In fact I often feel the ‘medium peat’ slot is virtually unoccupied, so it’s great to find a malt that takes it seriously, and brings a swathe of sweet complexity to counterpoint the peat; a wave of earth, tobacco and tinder notes are followed by a sea breeze going through a heather field. Finally there’s some spice and cedar – this is beautifully complex. (NT 16/07/19)
