Pink and fizzy, what`s not to like?! This is not a pet-nat, although it quacks like one, it is a Methode Ancestrale, where the primary fermentation starts in the tank but finishes in the bottle. Fresh, prettily red-fruited, zingy, quite varietal - it is made from Gamay - with lovely `sapidite` as the French say (this is very popular in Paris at the moment). Delightful, not completely dry although it feels dry, just great fun. (JH 19/06/2025)
