For many people their knowledge of bitters starts and finishes with a partial recognition of one brand - Angostura. But mostly there is little awareness of what bitters actually do. They were originally developed as a way of preserving the properties of medicinal herbs - we are talking ancient Egypt and onwards. Nowadays the category includes everything from Aperol to these classic cocktail ingredient versions.
