The 2025 Quinta Apolonia feels more harmonious at this early stage than the previous vintage did. It`s a blend of Verdejo from different plots and some 5% other varieties. Most of the grapes fermented in stainless steel and concrete, but 35% to 40% of the volume fermented and matured in used 300- and 500-liter barrels. It`s primary and fruit-driven, with notes of white fruit and flowers and a touch of pollen and fennel. It has good ripeness, 13.5% alcohol, a pH of 3.5 and 4.55 grams of acidity, finishing dry, despite having some 2.2 grams of residual sugar. 65,000 bottles produced. It was bottled in March 2025. 92 points
