2020 Tissot Cremant du Jura Indigene

A true Jura wine, made with small quantities of purely local varieites Poulsard and Trousseau as well as borrowing Chardonnay (50%) and Pinot Noir (40%) from neighbouring Burgundy. The first fermentation is with natural yeast and the second is kicked off with Stephane`s vin de paille. It is a serious sparkler, complex and with a lightly oxidative richness. (CW 05/07/21)
