Jonathan Pabiot is the new star of the Loire Valley, compared by some to the late Didier Dageneau. He makes the most exciting Pouilly-Fume you are likely to come across, entirely classic but with unusual depth, while his practice of organic farming is an unusually self-sacrificing pursuit in a region as prone to rain as the Loire. 2014 though was a brilliant harvest across the valley and this wine is endowed with an electric energy. Nettle, blackcurrant leaf and asparagus one minute, lime and peach the next. (NT 20/04/16)
