The Pabiot domaine is based in Les Loges and spans across 20 hectars of vineyards. Their vines are planted on a variety of soil types, but it is the kimmeridgian marl that gives their wines a base of minerality and a certain smokey character; which makes them ever so appealing. Jonathan takes a natural approach to working the vines. They were certified organic in 2006 and biodynamic in 2016. For most of their wines, only stainless steal and concrete is used for fermentaion and ageing, keeping the focus on the purity of the fruit and the freshness. These are focussed, precise and interesting Sauvignons. "Like a chef in the kitchen, i understood that to make a good wine, i need good grappes and only accompany and guid the vinification until the bottling.
