Bourbon HH then Sauternes HH
Speyburn almost began with an epic fail... the proprietors were determined to open in 1897, Queen Victoria`s diamond jubilee, but the year ground by and they were beset by delays. Finally they got the stills up and running in mid-December, in a snow storm, although they hadn`t yet got around to putting in doors or windows. They did finally manage to bond one barrel of whisky in 1897. Things have setted down since then. This is an absolutely classic Speyside-style bottling, rich and custardy, full of creme brulee and chocolate. But there`s also an intriguing salty note. This is one I keep coming back to.
