Haymans Old Tom gin is an example of a Victorian style where the use of flavourings was more opulent and a touch of sweetness in the spirit gave a bit of richness and more length. This was from a time when big flavours and use of spices was even more common than today. This is a great gin to have with seafood as well as being the proper ingredient for a Tom Collins. Liquid history in a bottle, this goes very well mixed with Orangina or as a cocktail ingredient.
