Vegan
In classical times, amphorae were sealed with resin to stop wine oxidising early; the resin had the side effect of flavouring the wine. The Romans started using barrels to store wine from the 3rd century, and no longer needed the resin; but they had grown to like the taste, and the style has endured ever since. Modern Retsina is made by adding small amounts of pine resin to the fermenting must, which is filtered out before bottling. Gaia`s Ritinitis smells for all the world like pine cones drying in the sunshine, and takes me right back to hiking in Mediterranean woodland. An ideal match for strong flavoured meze; that rare thing, a wine that will not be defeated by a garlic dip. (NT 16/08/19)
