The `pseudo` vin de paille (it doesn`t fulfill the requirements for the category, so it`s not sold or labeled as such) 2018 Spirale Passerille a l’Ancienne comes from a vintage when they made more sweet wine. This is a blend of Savagnin and Chardonnay with a little Poulsard, and it`s left to dehydrate for four months and then pressed very early, resulting in 8% alcohol and notes of quince and baked apples and a full 300 grams of sugar that feel quite integrated and balanced through very good acidity. 94 points
