At Dante Rivetti the bulk of their income and production derives from their famed Moscato, which is delicious and very understandably extremely popular. However for us it is the reds which are the glory of the estate. Rivetti`s estate comprises some fabulous vineyards around Neive in Barbaresco and the painstaking methods produce elegant and immensely classy wines. As an example of the detail here they bought a new destemmer, which is not only very gentle as the modern ones are, but also removes the peduncula of the stem which Nebbiolo grapes otherwise tend to retain.

They also have a fermenter that pumps a small amount of oxygen through the must to help the yeasts. It also removes the pips through the bottom of the vat so that they don`t get crushed in the press and release their bitter oils into the wine. (CW 02/02/18)
