Very much on the savoury spectrum, but in an interesting, unusual style – smoked almonds, tempura courgettes spritzed with yuzu lemon, crisp-fried potato skins tossed with grapefruit zest and chervil. Crunchy acidity and ultra-fine piercing bubbles. An aperitif-canapé wine, without doubt. If we`re thinking classic `English`, then a mini cone of seaside fish & chips, or a pick-em-up-with-a-toothpick Llansteffan Beach dainty pickled cockles. 16.5 points
