Moulin Touchais make wine slightly differently from the norm these days. There is no oak aging on these wines and they are bottled after only seven or eight months in tank, all the better to mature in bottle. 100% Chenin Blanc gives us promary fruit flavours of apple and tropical fruit, while the extended bottle age develops the honey and baked flavours as well as reducing the original sweetness level.
