Pascal Jolivet set up his eponymous company in 1987, beginning by buying in fruit from trusted growers and purchasing his first vineyards in 1993. He had been a wine merchant and agent for some important brands including Champagne house Pommery and knew what he wanted to achieve. Now, with over sixty hectares of organic vineyards under ownership, he and his talented team including winemaker Valentina Buoso, who has worked for Cape Mentelle in Western Australia, in Chile and Bordeaux, make a series of mineral, fruity wines, with this Pouilly-Fume at the pinnacle of their achievements.
