The perfume is exquisite and the finesse is remarkable; this is a very fine sake. Daiginjo of course denotes the most polished category of sake, in which the rice grains used to brew the sake will first be milled down to half their original size; the stripping off of the coarser outer layers leads to a more finely-textured drink. The aromatics are all about yuzu, cherry blossom and petrichor, with a dry, herbal note of fennel on the finish. (NT 04/08/23)
