I’ve never come across a wine that tasted so distinctively of thyme before. I can’t imagine a better match for pizza bianca or grilled peppers, and I paired it very well with tomato and green bean pasta, but really the food matching possibilities here are as versatile as the herb itself. Minutolo is an exclusively local Pugliese variety that barely made it into the 21st century, but it is now on the road to recovery thanks to pioneers such as I Pastini. Three cheers for them!
