N.V. Gonzalez Byass Amontillado Cuatro Palmas

The Cuatro Palmas bottling is dry but has very rich aromatics, and stylistically it seems to sit between an Amontillado and an Oloroso. It smells like dry treacle, with a breadcrumb character from the original flor influence. It has aged for almost four decades in the cellars of Gonzalez Byass. Every year the bodega invites a Master of Wine to taste their way through the barrels destined for that year`s release of Tio Pepe; the very best, most subtle or most striking are taken apart and released instead as that year`s `Palmas` sherries. Traditionally the chalk Palma mark (that looks like the palm of a hand) was used on the barrels as a mark of particular quality, and the more marks, the more mature the wine. (NT 04/01/18)

En rama but not labelled as such. A 48-year-old sherry, originally from the Tio Pepe solera, that is now technically a fine old Amontillado. Bottled from one of the remaining six casks in the Museo Solera. TA 8.4 g/l, pH 2.8, RS 7.2 g/l. Neither filtered nor clarified. Saca de 2016. Light Sienna colour. Nutty and rich and almost sour in bitter toffee even though it is bone dry, super-intense and long. 17.5 points
