Ume is plum in case you`re wondering. And it is delicious. This was not what I was expecting to taste. Kamoizumi is a classic producer from the Hiroshima region and this is a typically delicate and yet strong flavour. The sake is a genshu style, which means undiluted. It is then infused with the finest organic plums from Kishu, Japan`s best plum orchard region.
It has very definite plum aromas - pronounced and very natural smelling. In the mouth there is distinctive acidity, mainly plum derived, fruit grip, skin and flesh. It`s mouth filling with a pronounced fruit flavour that is still delicate and super fresh. It has a long finish with a slight mineral salt tang. It lasts for a long time when open and can be served chilled or with a splash of hot water according to the season. Drink with the same foods as a young Pinot Noir. (CW 21/10/14)
