The Thymiopolous family have been farmers and viticulturalists in the village of Trilofos, in Naoussa, Greece, for generations, but only moved into winemaking in 2005, when Apostolos Thymiopolous produced the first vintage of `Earth and Sky`. They work almost exclusively with the native Xinomavro grape. They have vineyards in both Trilofos - in the southern part of the appellation, at 100-220m of altitude - and Fytia - high-altitude (400-650m), on the slopes of Mount Vermio. /JH
