Vegan
From a single block of 9 rows of 30 year old vines. Hand-harvested, whole-bunch pressed, fermented with wild yeast in French oak (mix of old and new). 11 months in oak, during which time the wine went though malolactic fermentation and monthly lees-stirring. Tight and reductive on opening, with citrus fruit underneath the struck-match aromas. The palate is full, yet very restrained, with bright salinity. A high-energy wine with citrus pith and cooked red apple notes, very `Burgundian`. (JH 26/10/2023)
