Heirloom Amber sake
As the only non-Japanese toji (master brewer) in Japan, Cornishman Philip Harper has brought an outsider`s eye and an innovative mindset to the world of sake. Time Machine is his attempt to recreate sake as it would have been made and drunk 300 years ago; he has followed a method and recipe recorded in 1712. It is amber in colour, sweet in style, but also absolutely packed with complex umami elements. It evokes molasses, dry fruit, digestive biscuits, shiitake mushrooms, and soy sauce, and is a love-it-or-hate-it style. The finish is complex, savoury, and acid-driven. It pairs incredibly with blue cheese (which certainly wouldn`t have been available in Japan in 1712). (NT 03/01/24)
