Uncorked has come a long way over the last 30 years. We began as a Bishopsgate bottle shop, and quickly grew into a full-service wine merchant, with a big en primeur programme and a very loyal customer base. We're still a City bottle shop, but we also store some 30,000 cases of wine in bonded warehouses for over 1,000 customers.
And Bollinger? They've been on the scene even longer than we have. Bollinger was founded in Aÿ in 1829, and raised to greatness by Madame Lily Bollinger in the aftermath of the Second World War. She expanded the house's holdings to the extent that it can now supply two-thirds of the grapes it needs from its own vineyards, a rare advantage over its competitors. And she insisted on continuing to vinify in oak barrels. ('It is the traditional methods that count, even if they appear outdated: the quality of my wines is proof of this.') Unusually, the reserve wines that go into the classic non-vintage Special Cuvée are stored in magnum, which allows them to develop whilst at the same time guarding against oxidation. There are some 600,000 of them lying in Bollinger's labyrinthine cellars. Drop in to Uncorked any Thursday this month from noon on, and taste the fruit of Bollinger's labours. /NT
