Masumi is definitely one of the best breweries in Nagano, located in the mountains just west of Tokyo. Their Hiyaoroshi is pressed every winter and stored cold, without pasteurization, until release the following fall. This is an extremely fresh sake, with a round palate and ripe aromas.
