If there is a distillery that exemplifies the importance of cask selection then it is Bruichladdich. It is lightly peated but fully flavoured, with a touch of iodine and salinity, it`s a bit peppery, there`s honey and fudge, the whole subtley smoked. The distillery sits on the north side of Islay, across the water from Bowmore. (CW 10/12/12)
