The Dos Palmas bottling has less marked flor character than the Una Palma, and is instead characterised by a sharp saline streak and a greater degree of oxidation marking the move towards an Amontillado character. En Rama means on the branch, raw, unfiltered, and that is how this has been bottled, after 8 years aging under flor. Every year Gonzalez Byass invite a Master of Wine to taste their way through the barrels destined for that year`s release of Tio Pepe; the very best, most subtle or most striking are taken apart and released instead as that year`s `Palmas` sherries. Traditionally the chalk Palma mark (that looks like the palm of a hand) was used on the barrels as a mark of particular quality, and the more marks, the more mature the wine. (NT 04/01/18)
