From Guyana to Uncorked comes the El Dorado rum. Diamond Estate sits on the east bank of the Demerara River, which flows directly out of the rainforest, and here they make El Dorado, from sugar cane to molasses to rum via the world`s only remaining wooden column still. The age statement is a minimum; the 8 year-old is in fact a marriage from different casks that include some older rums. The finished result is beautifully smooth, butterscotch and tobacco with traces of oak. There`s even a Caribbean hint of flambee banana. Yum! (NT 13/02/15)
