High, east-facing Combe aux Moines is a natural amphitheatre planted inside an old quarry, so backs onto and is sheltered by a wall of exposed white rock. You can see it very clearly if you look uphill from the domaine. Succulent, sweet red cherry and orange notes mingle with a little white pepper. Great fruit, great finesse, great freshness. A fabulous wine that will get better and better for some time. Local lore has it that Combe aux Moines should be drunk 10 years after the vintage, in the hunting season, but I suspect the drinking window will be wider. (NT 09/01/20)
