The 2007 Dizy-Corne Bautray is soft, silky and quite open. Lemon peel, mint, white flowers and white pepper are some of the notes that give the 2007 its distinctive brightness and energy. Equally polished on the palate, the 2007 is exceptionally silky and finessed in its tactile impression. A wine of classiness and total understatement, the 2007 should drink well for at least another 5-10 years, perhaps more. There is good brightness in the glass, but the wine’s structure is very much medium in body. One of the things that stands out most is the silkiness and nearly imperceptible feel of the bubbles, especially as the wine opens up in the glass. Disgorged January, 2016. No Dosage. 93 points
