Quite an old distillery Dalmore, having been founded in 1839, just north of the Black Isle. And in 1870 it became the first whisky ever to be (officially) exported (in point of fact, to Australia). In 1917 the navy took the distillery over to build mines; in 1920 they left it again, in ruins after a fire and an explosion. Not the best tenants. Wisely, Dalmore returned to making whisky again; and so things have continued since. This is custard and cream tea, bourbon biscuits on polished mahogany table tops. Sweet and rich. There’s an unusual finish on this cask, the so-called Shave Toast Rechar. In a Jerez cooperage, ex Rioja casks are scraped out, retoasted, and lightly charred. (NT 22/08/19)
