Medium sweet when fermentation stops and sweetens in cask. Ricardo de Freitas aims for drier Malvasia than most; RS 95 g/l rather than RS 120–130 g/l. Must have more than 3.5 Baumé before bottling. This example has RS 104 g/l. Single casks, giving 900 bottles average from a 620-litre cask, dating from 1993. Ricardo explains that he tries not to sell out and not accept multiple bottles. More orange than pink. Pale, bright tawny with an apricot tinge. Almost nutty and really quite concentrated. Lots of impact. Acidity not intrusive but definitely there. 17 points
